UFIT Recipes: Ploughman’s Lunch with Creamy Ranch Dressing

We have all been there, sometimes we would just like to whip up something really quickly. Here's a simple salad you can easily put together when you are strapped for time after a day's work or would just like things to be as simple as possible over the weekend.

Ploughmans Lunch with Creamy Ranch Dressing

Salad ingredients



  1. Lettuce and/or spinach to fill bottom of bowl

  2. 1/2 cucumber, sliced

  3. 8 cherry tomatoes, cut in half

  4. 1/2 red onion, peeled and thinly sliced

  5. 4 - 6 slices prosciutto, grilled

  6. 2 chicken fillets. Seasoned with cajun spice and grilled till cooked through

  7. 60g feta cheese cut into cubes

  8. 2 boiled eggs, peeled and chopped

  9. 1 avocado, chopped

  10. 2 gherkins cut in half lengthways (optional)


Creamy Ranch Dressing



  1. 1/2 cup homemade mayonnaise

  2. 1/2 cup full fat-greek yoghurt

  3. 1 clove garlic, crushed

  4. Chopped parsley around 2 tbsp

  5. Chopped dill around 2 tbsp

  6. Sea salt and black pepper for seasoning



  1. In a jug place the mayonnaise and yoghurt then add the remaining ingredients and mix well.


To Serve: Place the spinach and/or lettuce into the bottom of a bowl and top with the remaining salad ingredients. Drizzle over the ranch dressing and enjoy. This simple recipe serves 2 so you can share it with someone else!
